Ingredients

Crust

  • 1 ½ cups graham cracker crumbs

Filling

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 3 ripe kiwis, peeled and sliced

Topping

  • 1 cup kiwi puree (about 4 kiwis)
  • 2 tablespoons granulated sugar for puree
  • Additional kiwi slices for garnish

Instructions

  1. Prepare the Crust: In a bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator to set while preparing the filling.
  2. Make the Filling: Beat the softened cream cheese in a large bowl until smooth and creamy. Add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until fully combined.
  3. Add Kiwi: Gently fold the sliced kiwis into the cream filling, ensuring even distribution without breaking the slices.
  4. Assemble the Cheesecake: Pour the filling mixture over the chilled crust in the springform pan. Smooth the top and refrigerate for at least 4 hours to allow the cheesecake to set properly.
  5. Prepare the Topping: Blend approximately 4 kiwis with 2 tablespoons of granulated sugar until smooth to create the kiwi puree. Once the cheesecake has set, gently spread the kiwi puree evenly over the surface.
