This Easy Pepper Steak recipe features tender strips of flank steak sautéed with colorful bell peppers and onions in a savory garlic soy sauce. Ready in just 30 minutes, it's a quick and flavorful weeknight dinner perfect served over rice or noodles.

Ingredients

Beef and Marinade

  • 1 lb flank steak, sliced thinly against the grain
  • ¼ cup low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 cloves garlic, minced

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium onion, sliced into rings or half-moons

Other

  • 2 tbsp vegetable oil

Instructions

  1. Slice Steak: Slice the flank steak against the grain into thin strips to ensure tenderness and prepare the bell peppers and onion by slicing them thinly.
  2. Make Marinade and Marinate: In a bowl, combine the soy sauce, brown sugar, minced garlic, and cornstarch. Add the sliced steak to this mixture and let it marinate for at least 15 minutes to absorb flavors.
  3. Cook Steak: Heat vegetable oil in a large skillet over medium-high heat. Cook the marinated steak in batches for 2-3 minutes until browned. Remove the cooked steak from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the sliced bell peppers and onions and sauté for 3-4 minutes until they are tender-crisp but still vibrant.
  5. Combine and Finish Cooking: Return the cooked steak and any leftover marinade to the skillet with the vegetables. Stir everything together and cook for another 2-3 minutes until the beef is fully cooked and the sauce thickens slightly.
  6. Serve: Serve the pepper steak hot over steamed rice or noodles for a complete meal.

Notes

  • For a gluten-free version, substitute tamari or a gluten-free soy sauce for regular soy sauce.
  • You can use sirloin or ribeye steak as alternatives to flank steak.
  • If you prefer less sweetness, reduce the brown sugar to 1 teaspoon.
  • Make sure to slice the steak against the grain to keep it tender.
  • Serve with steamed rice, noodles, or even cauliflower rice for a lower-carb option.
