This Delicious Shrimp Sushi Rolls recipe is an easy homemade Japanese dish featuring perfectly cooked shrimp, seasoned sushi rice, fresh cucumber, and creamy avocado wrapped in nori sheets. Ideal for sushi lovers looking to enjoy a fresh, flavorful roll made in their own kitchen.

Ingredients

Sushi Rice

  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt

Shrimp Filling

  • 8 large raw shrimp (peeled and deveined)

Vegetables and Wrap

  • 2 nori sheets
  • ½ cucumber (julienned)
  • 1 ripe avocado (sliced)

Serving

  • Soy sauce for dipping

Instructions

  1. Prepare the Rice: Rinse sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice following package instructions for best results.
  2. Season the Rice: Once the rice is cooked, mix it gently with rice vinegar, sugar, and salt. Allow it to cool slightly to room temperature before assembling the rolls.
  3. Cook the Shrimp: Heat a pan over medium heat and cook the peeled and deveined shrimp for about 3 minutes on each side until they turn pink and opaque. Remove shrimp from heat and set aside.
  4. Prepare the Nori Sheet: Place one nori sheet shiny-side down on a bamboo sushi rolling mat. Wet your hands to prevent sticking, then evenly spread a thin layer of sushi rice over the nori, leaving about an inch uncovered at the top edge for sealing.
  5. Add the Fillings: Lay the cooked shrimp, julienned cucumber strips, and sliced avocado evenly over the rice on the nori sheet.
  6. Roll the Sushi: Using the bamboo mat, roll the sushi tightly from the bottom edge, applying gentle pressure. Moisten the uncovered edge of the nori with a little water to seal the roll securely.
  7. Slice and Serve: With a sharp wet knife, slice the sushi roll into bite-sized pieces. Serve immediately with soy sauce for dipping.

Notes

  • Use a sharp knife dipped in water before each cut to avoid squashing the sushi roll.
  • Allow the seasoned rice to cool to room temperature to avoid wilted nori.
  • You can substitute shrimp with crab meat or cooked tuna for variety.
  • Ensure shrimp is fully cooked for safe consumption.
  • Press sushi rice gently on the nori to avoid overly squished rolls.
