Chicken Satay with an Easy Peanut Sauce is a delightful comfort-food favorite featuring tender marinated chicken strips grilled to perfection and served with a creamy, tangy peanut sauce. This recipe combines aromatic spices and a touch of sweetness, making it a perfect appetizer or main course with a Southeast Asian flair.

Ingredients

Chicken Marinade

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 tbsp soy sauce
  • 2 tbsp coconut milk
  • 1 tbsp brown sugar
  • 1 tbsp curry powder
  • 2 garlic cloves, minced
  • ½ tsp ground turmeric
  • ¼ tsp black pepper

Peanut Sauce

  • ½ cup creamy peanut butter
  • 2 tbsp lime juice
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • ¼ cup warm water

Instructions

  1. Prepare the marinade: In a bowl, combine soy sauce, coconut milk, brown sugar, curry powder, minced garlic, ground turmeric, and black pepper. Mix well until all ingredients are incorporated.
  2. Marinate the chicken: Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 20 minutes to allow the flavors to develop.
  3. Skewer the chicken: Thread the marinated chicken strips onto skewers, arranging them evenly for uniform cooking.
  4. Grill the skewers: Preheat your grill to medium-high heat. Place the chicken skewers on the grill and cook for 6 to 8 minutes per side, or until the chicken is cooked through with a slight char.
  5. Make the peanut sauce: In a small bowl, whisk together peanut butter, lime juice, hoisin sauce, honey, and warm water until smooth and creamy.
  6. Serve: Remove the chicken satay from the grill and serve hot with the prepared peanut sauce on the side for dipping.

Notes

  • For best flavor, marinate the chicken for longer than 20 minutes, up to 2 hours if possible.
  • If you don't have a grill, you can cook the skewers on a grill pan or under a broiler in your oven.
  • Use fresh lime juice for the best tang in the peanut sauce.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Adjust the peanut sauce consistency by adding more warm water if needed.
